:: Stir-fried Pork and Long Beans with Roasted Chili Paste

Moo Pad Num Prik Pao

Wonderfully simple and at the same time fine-tuned with flavor from roasted chili paste and other ingredients. This dish has a good compliment of textures and goes great with rice and a wide variety of other dishes. The fried veggies and meat integrate well with various American dishes for example, but again add a few other touches such as the roasted chili paste which itself brings an appealing combination of ingredients and flavors.

Preparation

  1. Clean and cut pork into small thin pieces.
  2. Peel off garlic skin. Clean, pat dry and mince garlic.
  3. Clean and cut long beans into 1-1.5 inches long.

Directions

  1. Heat oil in a pan. On medium-high heat, add pounded garlic. Stir fry until it turns golden brown, about 1-2 minutes.
  2. Add pork and stir for about 5 minutes. Add long beans. Stir for about 2-3 minutes.
  3. Add roasted chili paste. Mix well with pork and long beans. Stir frequently until pork is cooked.
  4. Add water, sugar and fish sauce. Stir well.
  5. Serve on plate.


  Before Cooking

  • Serving size: 2-3 persons.
  • Pork can be substituted with chicken.
  • Omit long beans if desired. In some recipes, fresh cucumber and tomato will be served with this dish.

1 cup Pork
2 cups Long beans
7-8 cloves Garlic
2-3 tablespoons Roasted chili paste
1 teaspoon Sugar
1 1/2 tablespoons Fish sauce
2 tablespoons Vegetable oil
1/4 cup Water
