:: Stir-fried Ground Meat with Thai Holy Basil

Pad Kra Phrao Gai

This stir-fried ground pork with holy basil dish receives its spicy liveliness from fresh chilies and garlic. This is one of the many simple, spicy dishes that may be served as part of a communal meal or one-dish meal. It is a delicious and filling all-in-one meal that can be enjoyed any time of day.

Preparation

  1. Peel off garlic skin. Clean and pat dry.
  2. Clean chilies. Cut off stem. In a mortar, add garlic and chilies. Pound them together.
  3. Pick off only the leaves of the Thai holy basil. Clean and pat dry.

Directions

  1. Heat oil in a pan. On medium-high heat, add pounded garlic and chilies paste in the pan. Stir fry until it turns golden brown.
  2. Add ground pork and break the ground pork with a cooking spoon or a spatula. Do not let it remain in big chunks.
  3. Stir frequently until ground pork is cooked.
  4. Once ground pork is cooked, add sugar, black soy sauce and fish sauce. Stir well.
  5. Add water and holy basil. Stir until holy basil is wilted.
  6. Serve with steamed rice.


  Before Cooking

  • Serving size: 2-3 persons.
  • Ground chicken or ground turkey can be substituted for ground pork.
  • To increase or reduce spiciness, add or lessen chilies. Or cut chilies in half instead of pounding them with the garlic.




  Ingredients

1 cup Ground pork
1 cup Thai holy basil
7-8 cloves Garlic
10-20 Thai chilies
1/2 teaspoon Sugar
1 teaspoon Black soy sauce
2 1/2 tablespoons Fish sauce
2 tablespoons Vegetable oil
4 tablespoons Water
