:: Stir-Fried Chicken with Garlic, Coriander and White Pepper Powder

Gai Pad Kra Thiam Prig Thai

A homemade dish for people who love the fragrance of garlic and coriander. The fresh aroma and mild spiciness from the white pepper powder help make this a favorite. This dish is another great way to build variety into your chicken dishes. This serves as a main dish that is wonderfully full of flavor and easy to eat without being overly oily or greasy. A satisfying dish for its taste and set of textures, good for a simple or more elaborate meal.

Preparation

  1. Clean chicken and slice into thin bite size pieces.
  2. Peel off garlic skin. Clean, pat dry and mince garlic.
  3. Clean and chop coriander.

Directions

  1. In the bowl of chicken, add minced garlic, sugar, fish sauce and Thai light soy sauce. Mixed chicken well. Cover the bowl. Marinate for at least 1 hour. Overnight is better.
  2. Heat oil in a pan. On medium-high heat, add chicken. Stir until chicken is cooked. Add white pepper powder. Stir well.
  3. Turn off heat. Add coriander and stir well with chicken.
  4. Serve on plate.


  Before Cooking

  • Serving size: 3-4 persons.
  • Pork can be substituted for chicken.
  • Increase or lessen garlic amount as desired. Omitting garlic would miss a main feature of the dish.
  • Increase or lessen white pepper powder amount as desired. Omitting white pepper powder would miss a main feature of the dish.
  • White pepper powder can be spicy for some people. It is recommended to start with a small amount.

2 cups Chicken
1/3 cup Garlic
1 cup Chopped Coriander
1/2 - 1 tablespoon White Pepper Powder
1/2 tablespoon Sugar
1 tablespoon Fish sauce
3 tablespoons Thai light soy sauce
2 tablespoons Vegetable oil
